Focaccia is an Italian flatbread that looks like a bumpy pizza crust. A ready-to-serve pizza crust can be used instead. You can keep some in the freezer for quick lunches and easy snacks.
1 small focaccia crust (7 inches in diameter)
1 tablespoon low-fat Italian salad dressing
1 small green bell peppers, cut into rings
1 roma (plum) tomato, chopped (1/4 cup)
1 teaspoon grated Parmesan cheese
Fresh oregano leaves, chopped, if desired
1. Heat oven to 425°.
2. Place focaccia crust on ungreased cookie sheet; drizzle half of dressing evenly over crust. Top with bell pepper, tomato and cheese. Drizzle with remaining dressing.
3. Bake 5 minutes or until edge of crust is golden brown. Sprinkle with oregano.
