Chicken Fruit Salad

This light and fruity salad tastes best in summer when peaches or nectarines are at their peak. Serve it on lettuce leaves for salad or stuff it into a pita half for a terrific sandwich.




   ___ cup low-fat plain yogurt
   _ tablespoons mayonnaise
   _ cup cubed cooked chicken
   ___ cup seedless green grape
   _ large peaches, chopped (3/4 cup)
   _ medium stalk celery, diced (1/2 cup)
   _ teaspoon chopped fresh mint leaves or 1/2 teaspoon dried mint leaves


1. Mix yogurt and mayonnaise in medium bowl until smooth. Stir in remaining ingredients.
2. Cover and refrigerate at least 30 minutes or until chilled.
