Here's a grown-up take on the tuna melt that's just as delicious. Serve it with tomato soup for a light lunch or try it with Cold Gazpacho Soup (see on-the-go favorites chapter) to beat the summer heat.
6 ounces frozen crabmeat or frozen salad-style imitation crabmeat, thawed
1/4 cup mayonnaise or salad dressing
2 tablespoons grated Parmesan cheese
1 teaspoon Dijon style mustard
2 English muffins, split and toasted
1. Set oven control to broil.
2. Mix crabmeat, mayonnaise, cheese and mustard. Divide among muffin halves. Place on rack in broiler pan. Broil with tops 4 inches from heat 3 to 4 minutes or until tops start to brown.
