Blue Cheese Quesadillas |

These quesadillas are great served with a fruity salsa like the one for Caribbean Swordfish (see enjoyable entrees chapter). If you don't have time to prepare your own salsa, try it with tangy mango chutney instead.
1/2 cup shredded Monterey Jack-Colby cheese (2 ounces)
1/4 cup soft-style cream cheese
3 tablespoons chopped walnuts
2 tablespoons crumbled blue cheese
1 green onions, sliced
4 flour tortillas (6 inches in diameter)
Fruit salsa or chutney, if desired

1. Heat oven to 375°. Grease cookie sheet.
2. Mix all ingredients except tortillas and salsa. Place two tortillas on cookie sheet and spread with cheese mixture. Top with remaining tortillas. Bake 8 to 10 minutes or until cheese begins to melt and tortillas start
to brown.
3. Cut into wedges and serve with salsa.
