1 tablespoon unflavored gelatin
2 tablespoons water
6 tablespoons lemon juice
3 egg yolk
1/3 cup sugar
3 egg whites
1/3 cup sugar
Grated lemon zest
Soften gelatin in water in top of a double boiler; dissolve over hot water; cool. Add lemon juice. Beat egg yolks and sugar; add. Beat egg whites, sugar, and lemon zest until stiff; then fold in. Chill in serving bowls.
