___ cup almonds blanched
___ cup butter, softened
_ 3-ounce package cream cheese softened
_ tablespoons heavy cream
_ ounce sherry
___ teaspoon onion salt
_ ounces swiss cheese finely shredded (about 2 cups)
Wheat crackers, buttery round crackers or sliced fresh fruit
1. Lightly toast almonds Cool, then finely chop; set aside.
2. In a small mixer bowl at medium speed, beat butter and cream cheese until smooth and fluffy. At low speed, beat in heavy cream, sherry and onion salt until blended. Gradually beat in Swiss cheese, then almonds until well blended. Mound into a serving bowl or pack in a crock. Let stand for 30 minutes to develop flavor. Serve or cover and chill up to 2 weeks.
3. If chilled, remove spread from refrigerator and let stand to soften before serving. Serve with crackers or fruit.
