A mop is a thin basting sauce brushed on meats with a clean cloth mop during grilling or smoking to help keep meats moist and tender. Most often mops are used when cooking slowly or smoking larger cuts of meat. Mops can be as simple as broth or beer or more complex mixtures with fresh herbs. They are also a great way to add flavor without pouring on the fat. Just be sure to choose mops low in fat and without lots of sugar.
