Grease or oil the rack before lighting coals or turning gas on.
Place the grill rack 4 to 6 inches above the coals or gas burners.
For even cooking, place thicker foods in the center of the grill rack and smaller pieces on the edges and turn pieces frequently.
To retain meat juices, turn with tongs instead of piercing with a fork.
To prevent overbrowning or burning of meats, brush sauces on during the last 15 to 20 minutes of cooking, especially sauces that contain tomato or sugar.
