1 medium cucumber, seeded and coarsely chopped (1 1/4 cups)
2 tablespoons chopped onions
2 tablespoons white vinegar
2 tablespoons water
1 teaspoon sugar
1/2 teaspoon salt
2 tablespoons chopped fresh parsley
Mix all ingredients in nonmetal bowl. Cover and refrigerate at least 1 hour but no longer than 8 hours. Drain relish.
