Serve With: Salmon with Cucumber Relish
_ medium cucumber, seeded and coarsely chopped (1 1/4 cups)
_ tablespoons chopped onions
_ tablespoons white vinegar
_ tablespoons water
_ teaspoon sugar
___ teaspoon salt
_ tablespoons chopped fresh parsley
Mix all ingredients in nonmetal bowl. Cover and refrigerate at least 1 hour but no longer than 8 hours. Drain relish.
