Shrimp Provençal

Ingredients

2 tablespoons olive oil
1/4 cup chopped shallot
1 clove garlic, crushed
1 tomato, peeled and coarsely chopped
8 ounces tomato sauce
dash salt and pepper
dash cayenne pepper
2 pounds shrimp, shelled, deveined and boiled for 5 minutes (until they just turn pink)
1/4 cup dry white wine
2 tablespoons chopped parsley

Directions:

1. In a large skillet over medium heat, heat the oil. Sauté the shallots and garlic for 2 minutes.

2. Add the chopped tomato, tomato sauce, salt, pepper, and cayenne pepper. Bring to a boil, stirring occasionally.

3. Reduce the heat to low and let simmer uncovered for 10 minutes. Stir in the shrimp and wine. Continue to cook for 5 minutes.

4. Remove from the heat and transfer to a serving platter. Sprinkle with parsley and serve.
