Baked Garlic Scampi

Ingredients

1/3 cup low-calorie margarine
dash salt
7 cloves garlic, crushed
2 tablespoons chopped parsley
1 pound shrimp (large), peeled, deveined, with tails left on
1 teaspoon grated lemon peel
1 tablespoon lemon juice

Directions:

1. In a 13 x 9 x 2-inch baking pan, melt the margarine in a 400°F oven. Add the salt, garlic, and 1 tablespoon parsley mix well.

2. Arrange the shrimp in a single layer in the baking pan and bake at 350°F for 3 minutes, uncovered. Turn the shrimp and sprinkle with lemon peel, lemon juice, and the remaining 1 tablespoon parsley. Continue to bake 1 to 2 minutes more until the shrimp are bright pink and tender.

3. Remove shrimp from oven and arrange on a warm serving platter. Spoon garlic mixture over shrimp and serve.
