Poached Red Snapper

Ingredients

1 cup dry white wine
1 medium lemon, sliced
6 sprigs parsley
5 peppercorns
5 scallion, sliced
2 bay leaves
1/2 teaspoon salt (optional)
1/2 to 1 cup water
1 1/2 to 2 pounds dressed red snapper fillets
1 lemon, sliced
parsley sprigs

Directions:

1. In a fish poacher or very large skillet, combine the wine, lemon slices, parsley sprigs, peppercorns, scallions, bay leaves, salt, and water. Bring the mixture to a boil add the snapper.

2. Cover the pan, lower the heat, and simmer the red snapper for 15 to 20 minutes until the fish flakes easily with a fork.

3. Carefully lift out the snapper and transfer to a platter. Garnish with lemon slices and parsley.
