Crabmeat Stuffing

Serves: 8

Serving size: 4 oz

Use this stuffing to fill the cavity of a zucchini or yellow squash.


   1/4 cup low-calorie margarine
   1/4 cup flour
   1 cup skim milk
   1/2 tablespoon Worcestershire sauce
   2 pounds crabmeat, flaked
   1/4 teaspoon nutmeg
   1 tablespoon chopped red bell peppers
   2 tablespoons minced parsley
   1/2 teaspoon (dash) salt
   Fresh ground pepper


1. Melt the margarine in a large skillet over medium heat; add flour and whisk until smooth.

2. Add the milk; continue cooking, stirring constantly, until thickened.

3. Add remaining ingredients; mix thoroughly. Continue to cook until crabmeat is heated through.
