Add a touch of New Orleans to dinner!
1 pound flounder filets
3/4 cup chopped tomatoes
1/4 cup chopped green peppers
3 tablespoons fresh lemon juice
1-1/2 teaspoons olive oil
2 teaspoons hot pepper sauce
1 teaspoon finely chopped onions
1/2 teaspoon dried basil
1/2 teaspoon celery seed
1 large green pepper, sliced into rings
1 tomato, cut into wedges
1. Preheat the oven to 400 degrees. Spray a 13x9x2-inch baking dish with nonstick cooking spray; place fillets in the dish. In a medium bowl, combine all the ingredients except for the garnish; mix thoroughly.
2. Spoon creole mixture over fillets and bake for 10 minutes or until fish flakes easily with a fork. Transfer to a platter and garnish with pepper rings and tomato wedges to serve.
