Fresh Flounder Creole

Ingredients

1 pound flounder filet
3/4 cup chopped tomato
1/4 cup chopped green pepper
3 tablespoons fresh lemon juice
1 1/2 teaspoons olive oil
2 teaspoons hot pepper sauce
1 teaspoon finely chopped onion
1/2 teaspoon dried basil
1/2 teaspoon celery seed
1 large green pepper, sliced into rings
1 tomato, cut into wedges

Directions:

1. Preheat the oven to 400°F. Spray a 13 x 9 x 2-inch baking dish with nonstick cooking spray place fillets in the dish. In a medium bowl, combine all the ingredients except for the garnish mix thoroughly.

2. Spoon creole mixture over fillets and bake for 10 minutes or until fish flakes easily with a fork. Transfer to a platter and garnish with pepper rings and tomato wedges to serve.
