1/4 cup butter or margarine
1/4 cup all-purpose flour
2 teaspoons salt
1/2 teaspoon pepper
2-1/2 cups milk
1-1/2 cups (6 ounces) shredded process American cheese
6 medium potatoes, peeled and thinly sliced
In a saucepan, melt butter. Add the flour, salt and pepper; cook and stir until a thick paste forms. Gradually add milk. Cook and stir until the mixture begins to thicken. Add cheese; cook and stir until melted. Place potatoes in a greased 13-in. x 9-in. x 2-in. baking dish. Pour sauce over potatoes. Bake, uncovered, at 350° for 1 hour or until potatoes are tender.
