Onion-Cheese Quiche |

1 10-inch unbaked pie crust
1 egg white lightly beaten
1 tablespoon margarine
1 cup onions thinly sliced
3 ounces mushrooms fresh, thinly sliced
1 1/2 cups swiss cheese shredded natural
2 tablespoons flour
1 teaspoon salt
4 eggs beaten
2 cups milk
Fresh parsley

Heat oven to 450° F. Brush pastry crust with egg white. Prick bottom and sides; bake crust for 6 to 8 minutes. Cool. Reduce oven temperature to 375° F. Heat margarine in a skillet; sauté onion slices and mushrooms until tender. Cool. Combine with cheese, flour, and salt. Spread in bottom of shell. Combine beaten eggs and milk; pour over mixture in shell. Bake for 40 minutes or until knife inserted halfway between center and edge comes out clean. Wait 10 minutes before slicing to serve. Garnish with parsley.
