Baked Beans With Ham Hock |

4 cups navy beans cooked
Meat from 1 ham hock, cubed
1 cup bean stock
1/2 cup onions minced
1/3 cup brown sugar firmly packed or to taste
1/4 cup ketchup
1 teaspoon dry mustard
Salt to taste
2 tablespoons vegetable oil or fat from bean stock
1 teaspoon instant coffee
2 slices bacon cut into 1/2 -inch pieces and browned (optional)

* (For beans, ham hock, and bean stock ingredients, please see cooking instructions for Navy Beans with the recipe for Minestrone Soup Preheat oven to 325° F. In a large saucepan bring to boil beans, cubed ham, stock, onion, brown sugar, ketchup, mustard, salt, oil or fat, and instant coffee. Pour into a lightly-greased 2-quart casserole and bake for 1 hour, stirring occasionally. Add more liquid if necessary. Serve topped with optional bacon pieces.
