A sweet way to use up those end-of-harvest green tomatoes.
3 cups canned or fresh green tomatoes, chopped and drained (reserve 1/4 cup juice)
1/2 cup brown sugar
1/4 teaspoon cinnamon
1 tablespoon butter or margarine
1/4 cup reserved tomato juice (from the tomatoes listed above)
2/3 cup flour
1/8 teaspoon salt
1/4 teaspoon baking soda
2/3 cup rolled oats
1/3 cup sugar
1/4 cup butter or margarine, melted
Spread chopped green tomatoes in the bottom of a greased, shallow baking dish. Mix brown sugar and cinnamon. Sprinkle over tomatoes. Dot with 1 tablespoon butter, cut into pieces. Pour reserved juice over top.
In a mixing bowl, combine flour, salt, soda, oats, and sugar. Stir in melted butter to make a crumbly mixture. Sprinkle evenly over the tomatoes. Bake at 350°F. for 40 minutes or until tomatoes are tender and crisp is lightly browned. Serve warm with sweetened whipped cream or ice cream.
