Apple Enchiladas

Ingredients

1 (30-ounce) can apple pie filling
7 flour tortillas
1 teaspoon cinnamon
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1/2 cup water
2 cups whipped cream

Directions:

Preheat oven to 350 degrees. Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon and roll up. Place seam side down in greased 9x13 pan. In a medium saucepan over medium heat, combine butter, white sugar, brown sugar, vanilla and water. Bring to a boil, stirring constantly reduce heat and simmer 3 minutes. Pour sauce over enchiladas and let stand 30 minutes. Bake for 20 minutes, or until golden. Serve with whipped cream.
