Apple Cobbler Cake

Ingredients

6 tart apples peeled, cored, and sliced
2 cups sugar
2 teaspoons cinnamon
3 1/4 cups flour
2 tablespoons lemon juice
2 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1/2 cup melted butter cooled
1/2 cup water
1 teaspoon vanilla extract
3 tablespoons sugar

Directions:

Preheat oven to 350°. Place apples in large bowl. Add 1 cup sugar, cinnamon, 2 tablespoons flour and lemon juice and mix until blended and apples are coated. Combine the rest of the dry ingredients and the wet ingredients in separate bowls. Add wet ingredients to dry and stir until a dough forms. Spread 1 1/2 cups dough over bottom of prepared pan. Top with apple mixture. Drop remaining dough by tablespoonfuls evenly over apple mixture. Sprinkle with remaining 3 tablespoons sugar. Cover and bake covered 30 minutes. Uncover and bake until cake is golden brown, about 45 minutes longer. Serve warm with ice cream.
