4 large potatoes
2/3 cup plain yogurt
2 tablespoons butter
1 teaspoon salt
Dash pepper
1 cup shredded Swiss cheese
1 pimiento, chopped
Bake potatoes until tender. Cut in half, scoop out; whip potatoes with plain yogurt, butter, salt, and pepper. Fold in Swiss cheese and pimiento. Pile into shells. Bake at 375°F for 15 minutes.
