6 medium-size potatoes
4 tablespoons shortening or bacon drippings
1 medium onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
4 tablespoons light cream
1/3 cup sharp pasteurized process cheese spread
Peel and slice potatoes thinly. Heat shortening in large skillet; add potatoes, salt, and pepper. Fry over low heat until golden brown. Pour cream over mixture; add cheese spread. Cover and cook slowly until potatoes are tender, about 10 minutes.
