   1/4 cup vegetable oil
   4 cups raw potatoes, cut into 1/2 inch cubes
   1 small onion, chopped fine
   1 tablespoon minced parsley


Cook with oil; potatoes, onion, and salt in skillet until tender. Add pimientos and parsley carefully. Cook until potatoes are golden brown.
