Crisp Potato Pancakes

Serves: 8

   6 medium-sized potatoes
   2 well-beaten eggs
   1 1/2 tablespoons flour
   1/2 teaspoon baking powder
   1 1/4 teaspoons salt
   Grated onion if desired


Grate potatoes and drain off water. Add eggs, flour, baking powder, salt and onion; mix well. Drop by spoonfuls onto a hot, well-greased skillet. Brown on both sides.
