Raspberry-Ginger Pork Skewers

For the brilliant yellow color of saffron rice at a fraction of the price, serve this dish with turmeric rice. Simply add 1/2 teaspoon ground turmeric to 1 cup uncooked plain white rice, and cook as directed on package.


   1 pound pork tenderloin
   1/2 cup raspberry spreadable fruit
   1 tablespoon raspberry vinegar or red wine vinegar
   1 teaspoon grated ginger root
   1/4 teaspoon salt
   1/4 teaspoon ground cayenne pepper
   2 small red onions, cut into eigths
   2 unpeeled oranges, cut into 1/2-inch slices and slices cut into fourths


1. Set oven control to broil. Remove fat from pork. Cut pork into 1-inch pieces. Beat spreadable fruit, vinegar, gingerroot, salt and red pepper with wire whisk until
blended; set aside.
2. Thread pork, onions and oranges alternately on each of eight 10-inch metal skewers, * leaving space between each piece. Broil skewers with tops about 4 inches
from heat 7 minutes, brushing frequently with glaze. Turn skewers; brush with glaze. Broil 6 to 7 minutes longer or until pork is no longer pink.

*If using bamboo skewers, soak in water at least 30 minutes before using to prevent burning.
