_ cups flour
_ eggs
___ teaspoon salt
___ teaspoon black pepper
___ teaspoon nutmeg ground
_ cup water approximately
_ quarts water boiling with 2 teaspoons salt added
_ tablespoon butter or margarine
Sift flour into bowl, make a depression in the center and break into it 3 eggs. Add salt, pepper and nutmeg and about 3/4 cup of the water. Mix this well (it should be a medium batter); if not soft enough, add water by drops until of the right consistency. Beat batter only until it is smooth. Pour batter into colander with large holes and with back of large spoon, force dough directly into 3 quarts salted boiling water. Stir gently to keep from sticking together. When the spaetzle rise to the surface, they are cooked. Drain and toss the spaetzle with 1 tablespoon butter or margarine to serve.
Note: Prepared, dried spaetzle may be purchased from gourmet sections in most food markets.
