4 zucchini squash (about 5 inches long)
2 to 3 cloves garlic minced or 1/2 teaspoon garlic powder
3 tablespoons butter or margarine, softened
Salt and freshly ground pepper to taste
Dash oregano of dried, crushed
3/4 cup parmesan cheese grated
Heat broiler; place rack about 5 inches from heat source. Wash, stem, and slice zucchini in half lengthwise. Steam until crisp-tender, about 8 to 10 minutes. Place zucchini halves on greased cookie sheet. Mix minced garlic, butter or margarine, salt, and freshly ground pepper to taste with dash of crushed oregano. Spread mixture on zucchini slices and top with cheese. Broil until golden, about 4 minutes. Serve immediately.
