6 tablespoons sugar
2 teaspoons cornstarch
1/4 teaspoon salt
3 tablespoons white vinegar
2 1-pound cans beets sliced or whole baby drained (reserve juice)
Orange rind Grated
1/3 cup orange juice concentrate fresh
1 1/2 tablespoons butter or margarine
In medium saucepan, mix and bring to boil sugar, cornstarch, salt, vinegar, and 1/4 cup reserved beet juice. Stir until thickened and clear. Stir in orange rind and juice; add beets. Bring to boil over medium heat. Just before serving stir in butter or margarine.
