However, most hosts would prefer not to be tested. "My specialty is home-made pasta," David Schmitt says, "but the first time I made it, it came out as hard as a rock. It never got soft. But I served it anyway because we had company and because it was the main course. Everyone ate it, and never complained." The genius in David's evening? Surrounding himself with friends and loved ones, who can be depended upon to smile even when they sample his less-than-perfect creations.
