12 graham crackers
1/4 cup melted butter or margarine
3 eggs
1/3 cup sugar
1/8 teaspoon maple extract
1/8 teaspoon vanilla extract
Dash salt
1/8 teaspoon cinnamon
1 (12-ounce) carton cottage cheese
1 pint sour cream
1/4 teaspoon almond extract
3 tablespoons sugar
Roll crackers into fine crumbs. Add melted butter; mix well. Pat mixture into buttered springform pan. Beat eggs. Add sugar, maple, vanilla, salt, cinnamon and cottage cheese; beat until smooth. Pour into baking pan and bake at 350°F for 30 minutes; remove from oven; increase heat to 475°F. Beat sour cream, almond and sugar; pour over top. Return to hot oven and bake for 5 minutes. Cool on rack; then chill in refrigerator.
