Mix together graham cracker crumbs, butter and 2 tablespoons sugar (reserve 2 tablespoons of crumb mixture for garnish); press into sides and bottom of spring-form pan; chill in freezer. Beat remaining sugar and cream cheese together until smooth and light. Beat eggs, vanilla and cornstarch until blended; add to cream cheese mixture. Stir in sour cream. Bake at 450°F for 10 minutes; then reduce heat to 200°F and bake for 45 minutes. Turn oven off and allow to cool for 3 hours with door open slightly. Remove sides from pan and sprinkle with reserved crumb mixture; chill.
