Pineapple Cheesecake

Ingredients

1 (8 1/2-ounce) package chocolate wafers
1/2 cup melted butter
1 (20-ounce) can crushed pineapple (reserve liquid)
2 envelopes unflavored gelatin
1/2 cup sugar
1/8 teaspoon nutmeg
1/8 teaspoon salt
3 egg yolk
1 cup reserved pineapple liquid
2 teaspoons lemon juice
2 teaspoons vanilla extract
1 teaspoon freshly grated lemon peel
2 (8-ounce) packages cream cheese
3 egg whites
1/4 cup sugar
1 cup whipping cream

Directions:

Mix butter and chocolate wafers pat into serving dish. Drain pineapple reserve liquid and set aside. In saucepan mix gelatin, sugar, nutmeg, salt, egg yolks, and reserved liquid. Let stand one minute then stir over low heat until completely dissolved (5 minutes). Stir in lemon juice, vanilla, and lemon peel. Add cream cheese beat well chill. Whip egg whites and sugar until stiff fold into chilled mixture. Fold in whipping cream and pineapple. Put into crust and chill.
