1 (8 1/2-ounce) package chocolate wafers
1/2 cup melted butter
1 (20-ounce) can crushed pineapple (reserve liquid)
2 envelopes unflavored gelatin
1/2 cup sugar
1/8 teaspoon nutmeg
1/8 teaspoon salt
3 egg yolk
1 cup reserved pineapple liquid
2 teaspoons lemon juice
2 teaspoons vanilla extract
1 teaspoon freshly grated lemon peels
2 (8-ounce) packages cream cheese
3 egg whites
1/4 cup sugar
1 cup whipping cream
Mix butter and chocolate wafers; pat into serving dish. Drain pineapple; reserve liquid and set aside. In saucepan mix gelatin, sugar, nutmeg, salt, egg yolks, and reserved liquid. Let stand one minute; then stir over low heat until completely dissolved (5 minutes). Stir in lemon juice, vanilla, and lemon peel. Add cream cheese; beat well; chill. Whip egg whites and sugar until stiff; fold into chilled mixture. Fold in whipping cream and pineapple. Put into crust and chill.
