3 ounces plain sweet vanilla wafers biscuit
1 tablespoon cocoa
1 1/2 ounces melted butter
1 (8-ounce) package cream cheese
1/3 cup sugar
1 teaspoon vanilla extract
1 teaspoon plain gelatin
2 teaspoons water
1 cup whipping cream
6 thin round chocolate mint patties after-dinner-mints
1 tablespoon water
Crush biscuits finely. Add cocoa and melted butter; press into springform pan. Beat together cream cheese, sugar, and vanilla extract until smooth. Dissolve gelatin in water over hot water; then fold into cheese mixture. Whip cream and fold in. Spoon mixture into crumb crust. Dissolve chocolate in top of double boiler. Cool slightly and spoon over cheesecake; swirl lightly. Refrigerate until set.
