Chocolate Mint Cheesecake

Ingredients

3 ounces plain sweet vanilla wafers biscuit
1 tablespoon cocoa
1 1/2 ounces melted butter
1 (8-ounce) package cream cheese
1/3 cup sugar
1 teaspoon vanilla extract
1 teaspoon plain gelatin
2 teaspoons water
1 cup whipping cream
6 thin round chocolate mint patties after-dinner-mints
1 tablespoon water

Directions:

Crush biscuits finely. Add cocoa and melted butter press into springform pan. Beat together cream cheese, sugar, and vanilla extract until smooth. Dissolve gelatin in water over hot water then fold into cheese mixture. Whip cream and fold in. Spoon mixture into crumb crust. Dissolve chocolate in top of double boiler. Cool slightly and spoon over cheesecake swirl lightly. Refrigerate until set.
