Potato Omelet

   1 potato
   1 tablespoon olive oil
   1/2 onion, chopped
   3 eggs
   1 tablespoon grated Cheddar cheese


Peel and slice potato very thin. Add olive oil and cook, turning until light brown. Add onion; cook slightly. Beat eggs; pour over potatoes. Sprinkle with grated cheese. Cook until eggs are set.
