6 eggs
3 tablespoons butter or margarine
1/4 cup flour
2 cups milk
1 teaspoon salt
1 1/2 teaspoons dry mustard
1/4 cup vinegar
Chinese noodle
Cook eggs until hard; peel and slice. Make a white sauce with butter, flour, milk, and salt. Add dry mustard and vinegar. Carefully fold in the sliced eggs. Server over Chinese noodles.
