4 halibut steaks
1/4 cup butter, melted
2 tablespoons olive oil
1 tablespoon vinegar
2 teaspoons lemon juice
1 clove garlic, minced
1/4 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon pepper
2 large zucchini
1 package frozen green peas, cooked
1 (8 1/4-ounce) can tiny carrots
Seasoned mashed potato
Place halibut steaks in greased baking dish. Combine butter, olive oil, vinegar, lemon juice, garlic, mustard, salt and pepper; spread on top. Meanwhile, halve and scoop out centers of zucchinis; cook until tender. Fill with green peas and tiny carrots. Make mounds of mashed potatoes. Arrange fish and vegetables on large, oven-proof platter. Dot with butter and broil until potatoes are browned slightly.
