2 tablespoons olive oil
1/4 cup brown sugar, packed
1 cup plain yogurt
2 cups oat bran
1 tablespoon baking powder
1/2 teaspoon baking soda
2 egg whites
1/2 cup raisins
1/2 cup nuts
Mix together olive oil, brown sugar, yogurt, and honey. Add oat bran, baking powder, and baking soda. Beat slightly egg whites; add to mixture. Add raisins and nuts. Bake in muffin pans at 400°F for about 15 minutes.
