Cherry Cobbler

Serves: 8

Print this Recipe


   4 cups fresh pitted cherries or unsweetened frozen cherries
   3/4 cup sugar
   1 tablespoon quick-cooking tapioca
   1 cup flour
   2 tablespoons sugar
   1-1/2 teaspoons baking powder
   1/4 teaspoon salt
   1/4 cup butter or margarine
   1 egg, slightly beaten
   1/4 cup milk
   Cream or ice cream


Combine cherries, sugar, and tapioca; let stand a few minutes. Cook until thick and bubbly; pour into baking dish. Mix together flour, sugar, baking powder and salt; cut butter in until coarse and crumbly. Combine egg and milk. Add egg mixture all at once to dry mixture; stir just to moisten. Spoon batter on top of filling in baking dish. Bake at 400°F for about 20 minutes. Serve with cream or ice cream.
