Who doesn’t love oatmeal raisin cookies? This recipe uses unsweetened applesauce to replace some of the margarine and egg substitute in place of eggs.
2/3 cup granulated sugar
2/3 cup packed brown sugar
1/2 cup margarine or butter, softened
1/2 cup unsweetened applesauce
1/2 cup fat-free cholesterol-free egg substitute or 2 eggs
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons vanilla extract
3 cups quick-cooking or old-fashionged oats
1 cup all-purpose flour
2/3 cup raisins
Heat oven to 375°. Mix all ingredients except oats, flour and raisins in large bowl. Stir in oats, flour and raisins. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 9 to 11 minutes or until light brown. Immediately remove from cookie sheet. Cool on wire rack.
