In a large mixing bowl, beat brown sugar, shortening, egg and maple flavoring until fluffy. Add flour, baking powder and salt mix well. Stir in coconut. Drop by tablespoonfuls 2 inches apart on a greased baking sheet. Dip the bottom of a greased glass into sugar and press cookies flat. Bake at 350 degrees for 10 to 12 minutes.
