6 cooking apples (Golden-Delicious, Braeburn, Rome) about 3-inch in diameter
3 tablespoons raisins
3 tablespoons chopped nuts
1/2 cup sugar
1 cup water
1/2 cup corn syrup
2 tablespoons butter or stick margarine
1/4 teaspoon ground cinnamon
Cream or Sweetened whipped cream (see recipe), if desired
1. Heat oven to 425°. Make pastry as directed-except roll two-thirds of the pastry into 14-inch square; cut into 4 squares. Roll remaining pastry into 14 X 7-inch rectangle; cut into 2 squares. Peel and core apples. Place apple on each square.
2. Mix raisins and nuts. Fill apples with raisin mixture. Moisten corners of pastry squares. Bring 2 opposite corners up over apple and pinch together. Repeat with remaining corners, and pinch edges of pastry to seal. Place dumplings in ungreased rectangular baking dish, 13 X 9 X 2 inches.
3. Heat remaining ingredients except cream to boiling in 2-quart saucepan, stirring occasionally. Boil 3 minutes. Carefully pour around dumplings.
4. Bake about 40 minutes, spooning syrup over dumplings 2 or 3 times, until crust is golden and apples are tender when pierced with a small knife or toothpick. Serve warm or cool with cream.
*Spreads with at least 65% vegetable oil can be used.

Lighter Apple Dumplings:
For 7 grams of fat and 360 calories per serving, omit Pastry for Two-Crust Pie. Cut stack of 6 sheets frozen (thawed) phyllo (18 X 4 inches) into 14-inch square. Discard remaining strips. Cover squares with damp towel to prevent them from drying out. Make 3 stacks of 2 sheets each, spraying each lightly with butter-flavored cooking spray. Fold each stack in half; spray top. Cut stacks in half. Place apple on each square. Omit nuts. Continue as directed in step 2.
