2 cups white rice cooked
2 cups corn kernals, canned or frozen
2 cups green bell peppers diced
1 1/2 cups kidney beans cooked
1 onion chopped
6 tablespoons white vinegar distilled
3 tablespoons vegetable oil
2 teaspoons soy sauce or tamari
2 teaspoons mustard
1 teaspoon horseradish
Mix the rice, corn, peppers, kidney beans, and onion in a bowl. Combine the vinegar, oil, tamari, mustard, and horseradish in a small bowl and pour over the other ingredients. Toss well.
