Creamy Pasta Salad |

Serves: 4

1/4 cup mayonnaise eggless
2 tablespoons lemon juice
2 cups pasta, cooked, (rotini, elbow, small shells, etc.)
4 green onions chopped
1 4-ounce can artichoke hearts, drained, sliced
1 1/2 tablespoons basil fresh or dried
1/2 teaspoon salt
Stir the eggless mayonnaise and lemon juice into the noodles. Add the green onions, artichoke hearts, basil, and salt and mix well. If the salad is too dry, add more mayonnaise and/or lemon juice.
