3/4 cup firmly packed brown sugar
3/4 cup cider vinegar
3 large firm pears (1 1/2 pounds), chopped
1/2 cup chopped onions
1/2 cup chopped red bell peppers
1/4 cup golden or dark raisins
1 tablespoon grated ginger root
1/2 teaspoon cinnamon
1/2 teaspoon coriander
1. In large saucepan, combine brown sugar and vinegar. Bring to a boil. Reduce heat; simmer 10 minutes.
2. Stir in all remaining ingredients. Return to a boil. Reduce heat; simmer 45 minutes or until thickened.
3. Refrigerate at least 3 hours or until chilled. Spoon into decorative crock or jar. Store in refrigerator for up to 2 weeks.
