I recently purchased your Cook'n Recipe Software and love it! I have tried several other cookbook programs but found them unsatisfactory.

Apple-Sweetened Cherry Preserves

Serves: 112

Prep Time: 30 minutes (ready in 26 hours 30 minutes) - Yield: 7 cups


   6 cups coarsely chopped pitted sweet red cherries
   1 (12-ounce) can unsweetened frozen apple juice concentrate
   3/4 cup water
   1 tablespoon unflavored gelatin
   1 teaspoon almond extract

1. In large saucepan, combine all ingredients except almond extract. Bring to a boil over medium-high heat. Cook and stir 3 minutes. Remove from heat. Skim foam from top. Stir in almond extract.

2. Ladle mixture into 7 clean, hot 8-oz. jars; cover with tight-fitting lids. Cool 2 hours

or until room temperature. Refrigerate 24 hours. (Preserves will thicken during refrigeration.) Store in refrigerator for up to 1 month.

TIP: * Frozen unsweetened pitted sweet cherries can be substituted for fresh cherries. Thaw slightly before chopping.
