Hot and Spicy Tomato Salsa |

Prep Time: 30 minutes - Yield: 4 cups
6 medium tomatoes, coarsely chopped (3 cups)
1 (15-ounce) can (1 3/4 cups) tomato purée
6 garlic cloves, minced
2 small jalapeno chiles, seeded, finely chopped
3 tablespoons finely chopped onions
1/3 cup dry white wine, or unsweetened apple juice
1/4 cup lemon juice
1/2 to 1 teaspoon ground red pepper (cayenne)
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon olive oil
1/4 cup chopped fresh cilantro
1. In medium saucepan, combine all ingredients except cilantro. Bring to a boil over high heat. Reduce heat to medium; cook 15 minutes, stirring occasionally.
2. Stir in cilantro. Ladle mixture into clean jars or nonmetal containers; cover with tight-fitting lids. Store in refrigerator for up to 5 days or in freezer for up to 2 months. Serve hot as a relish or sauce, or cold as a dip for chips.
