Jalapeno Cranberry Relish

Prep Time: 35 minutes (ready in 1 hour 35 minutes) - Yield: 4 cups


   _ (12-ounce) package fresh or frozen cranberries
   _ to 2 jalapeno chiles, quartered, seeded
   _ tart apple, peeled, finely chopped
   ___ cup finely chopped peeled jicama
   ___ cup orange marmalade
   ___ cup sugar
   ___ cup pomegranate seeds
   ___ cup chopped fresh cilantro
   _ tablespoon lemon juice
   _ tablespoon Dijon style mustard


1. In food processor bowl with metal blade or blender container, coarsely grind cranberries and chiles.

2. In large bowl, combine all remaining ingredients. Stir in cranberry mixture; blend well. Refrigerate at least 1 hour or until chilled.

3. Spoon mixture into decorative crock or jar. Store in refrigerator for up to 1 week.
