Homemade Tomato Sauce

1/3 cup olive oil
2 cups (2 large) chopped onions
2 garlic cloves, minced
8 cups (16 medium) coarsely chopped, peeled tomatoes
1 tablespoon dried oregano leaves
1 teaspoon sugar
1 teaspoon dried basil leaves
1 teaspoon crushed dried rosemary leaves
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups water
1 (12-ounce) can tomato paste


1. Heat oil in 4-quart saucepan or Dutch oven over medium heat until hot. Add onions and garlic cook until onions are tender.

2. Add all remaining ingredients mix well. Bring to a boil, stirring occasionally. Reduce heat simmer 1 hour, stirring occasionally.

3. Ladle mixture into clean jars or nonmetal containers cover with tight-fitting lids. Store in refrigerator for up to 1 week or in freezer for up to 3 months.
