Prep Time: 20 minutes (ready in 1 hour 25 minutes) - Yield: 2 crusts; 8 servings each
2 1/4 to 2 3/4 cups all-purpose flour
1 teaspoon sugar
1 teaspoon salt
1 package fast-acting yeast
1 cup water
2 tablespoons olive oil or vegetable oil
1. In large bowl, combine 1 1/2 cups flour, sugar, salt and yeast; mix well. In small saucepan, heat water until very warm (120 to 130°F.). Add warm water and oil to flour mixture; blend at low speed until well moistened. Beat 2 minutes at medium speed. By hand, stir in an additional 1/2 to 3/4 cup flour until dough pulls cleanly away from sides of bowl.
2. On floured surface, knead in 1/4 to 1/2 cup flour until dough is smooth and elastic, 3 to 5 minutes. Place dough in greased bowl; cover loosely with greased plastic wrap and cloth towel. Let rise in warm place (80 to 85°F.) until doubled in size, 30 minutes.
3. Place oven rack at lowest position; heat oven to 425°F. Grease two 12-inch pizza pans. Punch down dough several times to remove all air bubbles. Divide dough in half; press in greased pizza pans.
4. Bake at 425°F. on lowest oven rack for 15 minutes. Top as desired with favorite pizza toppings. Bake an additional 15 to 20 minutes or until crust is golden brown and toppings are thoroughly heated.
1. FOOD PROCESSOR DIRECTIONS: In food processor bowl with metal blade, combine 2 1/4 cups flour, sugar, salt and yeast; process 5 seconds.
2. In small saucepan, heat water until very warm (120 to 130°F.). With machine running, pour water and oil through feed tube; continue processing until dough forms a ball. (If dough does not form a ball, add an additional 1/2 cup flour, 1 tablespoon at a time.) Process an additional 40 to 60 seconds.
3. Carefully scrape dough from blade and bowl; place in greased bowl. Cover; let rise. Continue as directed above.
Tip: To freeze 1 pizza crust, prepare as directed above. Grease 12-inch pan. Press half of dough in greased pan. Bake at 425°F. for 15 minutes. Cool. Place in moisture-proof freezer bag. Freeze for up to 2 months. Thaw before using and top with favorite pizza toppings. Bake at 425°F. on lowest oven rack for 18 to 22 minutes or until crust is golden brown and toppings are thoroughly heated.
