2 cups flour
1 1/2 teaspoons sugar
1 teaspoon salt
3/4 cup + 2 tablespoons vegetable shortening (not oil)
3 tablespoons ice water
1/2 teaspoon distilled white vinegar
1 tablespoon ice water
Beaten egg yolk
Mix flour, sugar, and salt together. Cut vegetable shortening in until coarse and crumbly. Sprinkle iced water mixed with white vinegar, over mixture; toss with fork. If dough seems dry, add ice water. Divide and shape into two balls; chill until firm enough to roll out. Glaze top crust with beaten egg yolk.
